Every winter in the low country of South Carolina, January heralds the beginning of the Oyster Roasts. From the most private to the larger public Roasts, the Oysters are opened and eaten. It is our winter. It is good!
Oyster, got it. Oyster knife, got it!
Roasting the Oysters (How it is done)
After they are roasted they are "dumped" on this table to be put in the individual buckets for consumption.
Gathering the steaming hot Oysters for the buckets.
Timeless, a Charleston thing: Oyster Roasts and January.
The last of this batch, the table will be cleared and this process will be repeated, was repeated all day long. A cool day, but sunny, a perfect day.
